It's Swiss National Day today and in observance we salute this Swissest of Swiss cheeses, originally from the Emme valley (the -tal part represents "valley") in west central Switzerland. There is no official protection for the term Emmentaler, so the holey cheese on your Reuben may in fact hail from elsewhere, but it's hard to beat the original.]
